Sesame Ginger Prawn Lettuce Wraps with Tangy Asian Slaw

We’re bringing it back to Asian theme week and getting this incredible recipe up so you can make it at home! Not only is it light and the perfect healthy dinner for these last few warmer days but it's actually filling and insanely delicious! When hubby suggested lettuce wraps for this theme week I was hesitant, we’ve already done a prawn wrap recipe that's good and I felt like eating more than lettuce. He asked me to trust him and boy was I floored when he created this masterpiece!

It's hard to pinpoint the star of this dish - it's somewhere between the prawns and the sauce created for them and the slaw made to perfection that makes these lettuce wraps full of fresh crispy ingredients leaving you surprisingly full and satisfied! Another huge perk is this recipe is so quick to make it perfect after a long day of work - most of the time spent is just cutting your produce! The prawns take next to no time to cook and you have yourself a perfectly balanced meal that won’t leave you feeling full and sluggish for the rest of your evening!

Ingredients

Slaw

  • 1/2 tsp peanut butter

  • 1/2 tsp sesame oil

  • 2 tbsp rice vinegar

  • 1 tbsp lite sodium soy sauce

  • 1 tbsp sriracha

  • 2 tbsp honey

  • 1/2 tsp fresh ginger minced

  • 1/2 orange bell pepper julienned

  • 1 medium carrot julienned

  • 1/4 cup cabbage julienned

  • 1/4 cup cucumber julienned

  • Prawns

  • 1 340g bag uncooked deveined shelled prawns

  • 2 tbsp coconut milk

  • 1/2 tsp fresh ginger minced

  • 1 green onion - just the white part minced

  • 1 tbsp sesame oil

  • 2 tbsp lite sodium soy sauce

  • 2 tbsp chili garlic sauce or sambal oelek

  • Toppings

  • Peanuts chopped

  • Cilantro leaves

  • 1 green onion - just the green upper stems sliced thin

  • Lime wedges

  • Lettuce leaves for wraps - butter lettuce is what we have used

Directions

  1. In a medium bowl whisk together the peanut butter, sesame oil, rice vinegar, soy sauce, sriracha, honey and ginger until fully combined.

  2. Julienne all of the slaw vegetables, combine with the slaw dressing and toss.

  3. Mix the prawn sauce ingredients - coconut milk, ginger, soy sauce, green onion, chili garlic sauce and sesame oil.

  4. Toss prawns in sauce and start to heat 1/2 Tbsp sesame oil in a frying pan over medium heat.

  5. Once the pan is heated add the prawns and sauce and cook until prawns are fully cooked through, should be 2 minutes at the most.

  6. Assemble your wraps and enjoy!
